St. Ed’s Fish Fry Coleslaw Dressing

St. Edward the Confessor Catholic Church in North Chesterfield holds the largest Lenten Fish Fry in the Richmond area, serving 400-500 people each Friday.  Here is the recipe for their coleslaw dressing (or as they call it, “slurry”).  Three cups are enough to dress 5 lbs. of coleslaw mix, and a batch makes about 20 cups.  (Below is a smaller batch for home use to dress 1 lb. of coleslaw mix.)

Mass Recipe (dress ~34 lbs. of coleslaw mix)

1 gallon mayonnaise (We used Duke’s)

1 cup white vinegar

6 Tbs. Worcestershire Sauce

3 Tbs. Lawry’s seasoning salt

1 cup onions finely chopped in a food processor

½ cup yellow mustard

3 Tbs. Texas Pete or other hot sauce

3 Tbs. paprika

1 cup sugar

2 Tbs. garlic powder

Salt/pepper to taste

Mix all the ingredients together in a large bowl.  Taste for seasoning.

Home Recipe (dress 1 lb. of coleslaw mix)

½ cup mayonnaise

1.5 tsp. white vinegar

½ tsp. Worcestershire sauce

¼ tsp. Lawry’s seasoning salt

1.5 tsp. finely grated onion

¾ tsp yellow mustard

¼ tsp. Texas Pete or other hot sauce

¼ tsp. paprika

1.5 tsp. sugar

¼ tsp. garlic powder

Salt/pepper to taste
