
Anthony Bourdain’s cookbook Appetites mostly consists of his version of standard foods with advice on how to prepare them in home kitchens. This is an adaptation of his version of chicken salad. I started with a Costco rotisserie chicken, which we had most of in the refrigerator, instead of raw chicken breasts, and I added pickle and increased the flavorings a tad. It turned out well, although Carol thought it could use more mayonnaise.
1 lb. cooked chicken breast, cut into ¼ inch dice
½ cup mayonnaise
¼ cup red onion, diced
¼ cup dill pickle, diced
2/3 rib of celery, diced
2 tsp. fresh tarragon, chopped (optional, but good)
¼ tsp. celery seed
½ tsp. salt
¼ tsp. Worcestershire sauce
¼ tsp. Tabasco
Salt and pepper to taste
Mix all the ingredients together. Taste for seasoning. Add more mayonnaise if desired. Use for an entrée salad or as a sandwich filling.
