This easy one pot dinner suitable for weeknights is adapted from 30SecondsFoods. It will serve 4-6 people and will take about an hour total. It has a very pleasant lemony flavor.
¼ cup extra virgin olive oil
1 Tbs. lemon zest
¼ cup lemon juice
2 Tbs. chopped garlic
1 tsp. dried thyme
1 tsp. dried oregano
2 Tbs. chopped fresh parsley
1 tsp. salt
½ tsp. freshly ground black pepper
1.5 lbs. boneless skinless chicken thighs, cut into pieces
2 lbs. Yukon gold potatoes, peeled and cut into 8ths
1 lemon, cut into wedges
Preheat the oven to 400 degrees.
Put in a large bowl the olive oil, lemon zest, lemon juice, garlic, thyme, oregano, parsley, salt, and black pepper. Mix well. Add the chicken thighs, potatoes, and the lemon wedges. Stir to coat everything in the sauce and put in a baking dish. Bake for about 40 minutes, until the chicken is cooked through, and the potatoes are tender. Stir about half-way through. Turn the oven up to broil and cook for about 5 minutes to get some browning on the chicken and potatoes.
