Scallion Pancake Breakfast Wraps

Delish Magazine recently had a recipe for making breakfast wraps using scallion pancakes as the wrappe, as an upgrade to a tortilla.  I followed this idea using wraps from Trader Joe, although I reduced the quantities quite a bit.  Here is how I made each wrap:

1 Scallion pancake, cooked per package instructions and kept warm

2 slices lean bacon, halved

1 egg, beaten with salt and pepper

1 slice cheese, halved (I used sharp cheddar)

1 tsp. chili crisp

Sriracha sauce to taste.

Cook the scallion pancakes per the package instructions.

Cook the bacon halves in a skillet until fairly crispy.  Drain on paper towels.

Pour off most of the fat from the skillet and add the beaten egg.  Top with the bacon and cheese and put a lid on the pan to help melt the cheese.  Put the egg, bacon and cheese on top of the scallion pancake and add chili crisp and Sriracha sauce to taste.  Roll and serve immediately.
