
Shrimp paste is the term used in Charleston for shrimp salad. It is easily made and is useful for a lot of purposes, such as for the open-faced sandwich shown in the photo. This version was adapted from Does This Taste Funny from Stephen and Evie Colbert.
½ cup white vinegar
½ cup water
2 Tbs. Old Bay Seasoning
1 lb. unpeeled head off shrimp (smaller shrimp are good since the cooked shrimp will be chopped)
Half a medium onion, finely chopped
1/3 cup mayonnaise (I used Duke’s)
2-3 Tbs. hot sauce, optional (I used SriRacha)
Salt and pepper to taste (I thought it was fine as is)
Prepare a bowl of ice.
In a medium saucepan, mix together the vinegar, water, and Old Bay Seasoning. Bring to a boil. Add the shrimp, cover and cook for 2-3 minutes until just turning pink. Drain and put the shrimp in the bowl of ice to quickly cool, thereby avoiding overcooking them. Allow to cool to room temperature. Then peel and chop the shrimp.
In a medium bowl, mix together the chopped shrimp, onion, mayonnaise, and optional hot sauce. Check seasoning and add salt and pepper to taste. Refrigerate until ready to serve.
