Bulgarian Sausages

This is the first thing I have made from Hugh Mangum’s cookbook Barbecue: Smoked & Grilled Recipes from Across the Globe.  As shown in the photo, we made the meat mixture into 4 logs which we grilled on the barbecue,  We served them with ajvar (a pepper and eggplant paste) and yogurt, with a side dish of French fries.  Note that the meat should marinade for at least an hour, and preferably overnight.

1 lb. ground pork

½ lb. ground beef

1-1/2 tsp. ground cumin

1 tsp. salt

½ tsp. freshly ground black pepper

¼ cup beer

1 egg, beaten.

Mix together the cumin, salt, and pepper in a small bowl.

Mix the pork and beef together in a large bowl.  Sprinkle in the spice mixture and the beer and mix well with your hands. Mix in the egg with your hands.  Cover and marinade in the refrigerator for at least an hour, but preferably overnight.

Before barbecuing,  form the meat mixture into 4 or 8 logs.  Grill until cooked through, about 7-10 minutes.
