
I recently had the brainstorm that the apple brine used to marinade Greasy Little Birds (AKA Apple-Smoked Cornish Game Hens), Greasy Little Wings, and Greasy Little Thighs, would probably also be good with pork ribs. It was. We had almost finished eating the ribs when I remembered to take a photo of the remaining ribs and wings.
For a family dinner for 6 people, I marinated 3 lbs. of wings and 3 lbs. of pork ribs in a total of 1 recipe of the brine. I smoked both for 2 hours at 195. I then put the wings in the refrigerator and wrapped the ribs in heavy-duty aluminum foil and cooked them in the smoker at 250 degrees for 2 hours. I then grilled both the wings and the ribs. I glazed some of the ribs with Thai sweet chili sauce, and cut them into individual ribs for serving.
