Faith made these at the beach this year and it made a very tasty and fairly easy dessert. I just made a batch to confirm the concept and plan to make a double batch for my scouter buddies at Wildcat Lake next week. This is lot more of a concept than a recipe. The photographs show 6 servings made from one box of Betty Crocker Delights Supreme Triple Brownie Mix and a bit less than one half of a 1.5 qt. container of vanilla ice cream.
First bake the brownies in a sheet pan, a 13 x 9 quarter sheet pan for 1 box and 6 servings, or a 18 x 13 half sheet pan for 2 boxes and 12 servings. The idea is to make a thin brownie by using a bigger pan than is normally used. Bake at 350 degrees until done, which for the quarter sheet pan was 20 minutes.
Remove to a rack and cool. When cool, cut the quarter sheet pan of brownies into 12 equal pieces. Separate the brownies into 2 sets of 6 brownies. Form a bottom layer with one set of 6 brownies. Spread about a half inch of ice cream on top of this bottom layer. Allow to warm a bit to help the spreading. Then top with the other set of 6 brownies, wrap in plastic and put in the freezer until ready to serve.
