Family Skillet Dinner

I recently bought Retro Recipes by Bobby Hicks, which consists of modernized recipes for old-fashioned dishes which he thinks modern eaters will enjoy.  This is the first recipe I have tried from the book.  It is easy to make, takes about 40 minutes, and will serve 4 people.  Carol ate it plain and I added some SriRacha Ketchup to mine.

3 Tbs. olive oil, divided

12 oz. can of Spam, cut into bite-sized chunks

1 large onion, finely diced

2 Jalapenos, seeded and finely diced

1 stalk celery, finely diced

½ cup water

2 cups frozen hash browns

5 eggs, beaten

1 cup shredded cheddar cheese

Salt and pepper to taste (I added about ½ tsp. of black pepper to the eggs and did not add any salt)

Preheat the oven to 350 degrees.

Put 2 Tbs. of olive oil in a large ovenproof skillet.  Add the Spam and cook over medium heat for 5-7 minutes until crispy.  With a slotted spoon, move the Spam to a plate and leave the oil in the pan.

Add the onion, jalapenos, celery, and water and stir well.  Cook for about 15 minutes until the vegetables have softened and the water has evaporated.

Add the hash browns and the remaining Tbs. of olive oil.  Cook for about 5 minutes until the potatoes have started to color and crisp.

Remove from the heat.  Top the vegetables with the egg, then with the Spam, and last with the cheese.  Put in the oven for about 5 minutes until the eggs are set and the cheese is melted.  Serve immediately.
