Garlic Fried Rice

This is a popular breakfast in the Philippines where it is common to have cooked rice leftover from the previous night’s dinner. It was very good with the Filipino Garlic Sausage Patties . It would also make a good quick supper dish. This is an adaptation from Marvin Gapultos’ “The Adobo Road Cookbook”.

 

4 cups cold leftover steamed rice

2 Tbs. vegetable oil

6-8 cloves garlic, finely chopped

1 tsp. kosher salt

Break up any large rice clumps.

In a non-stick skillet, heat the oil and stir fry the garlic until lightly browned. Add the rice and salt, toss with the oil and garlic and break up any remaining clumps. Cook until the rice is lightly toasted serve hot

  1. I am going to make this recipe myself at my house. It’s an easy, slightly unhealthy and totally delicious breakfast. I want to make it with a fried egg though rather than with sausage, though.
