This is one of my son Ben’s favorite dishes and is a good example of Southern – Italian fusion cuisine. I had some leftover Pulled Pork from an earlier post and decided to make two trays for a dinner last night. One tray had sliced mushrooms, and one tray had pickled jalapenos and sliced onions. Both were very good.
I full recipe of pizza dough (from Pizza for One or for Many )
Barbeque sauce
8 oz. shredded sharp Cheddar cheese
Toppings – sliced mushrooms, sliced onions, pickled jalapenos, etc.
Olive oil
Make the dough earlier in the day. Preheat the oven to 475 degrees.
On a cookie sheet, spread out 2 tsp. of olive oil, and then with oiled hands spread the dough to cover the cookie sheet. This will take a while (and may need to include resting periods) since the dough will want to spring back. Add barbeque sauce to the pulled pork until it is well wetted. Sprinkle the pulled pork over the dough. Put the toppings on top of the pulled pork and then cover with the cheese. Bake about 20 minutes until the cheese is nicely browned and the crust is cooked.
