This recipe is adapted from a variation on Smashburger Tacos developed by Catherine Brookes which I found on mashed.com. The recipe will make 4 servings of 2 tacos each. Carol and I enjoyed half of it last night and will make the other half tomorrow night. It is quick and mostly involves pantry ingredients.
For the tacos
1 lb. ground chicken
½ red onion, minced
3 large cloves garlic, minced
1 Tbs. lemon juice
2 tsp. dried oregano
1 tsp. salt
½ tsp. freshly ground black pepper
8 flour tacos
For the toppings
½ cup tzatziki sauce
¾ cup diced cucumber
¾ cup diced tomato
½ red onion, thinly sliced
½ cup crumbled feta cheese
1-2 Tbs. olive oil
In a large bowl combine the chicken, onion, garlic, lemon juice, oregano, salt, and black pepper. Mix well with your hands. Divide into 8 portions using a scale.
Put one portion on top of each tortilla and spread it into a smooth even layer covering the tortilla.
Heat ½ Tbs. of olive oil in a medium to large skillet over medium heat. When hot, add one of the tortillas chicken side down and cook for 4 minutes. Carefully flip the tortilla to be tortilla side down and cook for another 2 minutes. Remove the cooked taco to a plate and top with the toppings. Repeat with the other tortillas adding oil to the pan as necessary to keep a thin layer of oil. I used 2 skillets to speed the process by cooking 2 tortillas at a time.
Serve immediately.
