Alaskan Sourdough Bread Mix

This posting is a product review.  I bought a box of Alaskan Sourdough Bread Mix from King Arthur Flour, since it was on sale.  I mostly followed the instructions with a couple of enhancements.  I let the dough rise for 2 hours, formed it into a ball and gave the dough a second rising of about 30 minutes in a ceramic baking dish which I also bought from KAF.  I scored the top of the loaf with a lame to help the dough expand while baking.  I had a baking steel in the oven and I added a cast iron frying pan to the lower shelf in which I put a cup or so of boiling water when I started baking the dough.

The dough was lower hydration than the artisan breads which I usually make. The bread turned out well with a very nice oven spring.  The crumb is close, like a sandwich bread.  It was quite tasty.
