
This recipe is adapted from simplybakings.com. It makes 2 generous servings and takes about 15 minutes to make. How spicy it is depends on which kind of black bean sauce is used. I used Guilin Style Chili Sauce, and it was moderately spicy. Also, hoisin sauce can be partially or fully substituted for the black bean sauce if a milder dish is desired.
For the sauce
1.5 Tbs. spicy black bean garlic sauce
2 tsp. soy sauce
2 tsp. black rice vinegar
1.5 tsp. brown sugar
For the green beans
1 Tbs. vegetable oil
1.5 cloves garlic, chopped
8 oz. green beans, trimmed and cut into 2-inch pieces
3/8 cup shitake mushrooms, sliced
3 Tbs. bell peppers, sliced (I used orange peppers)
¼ tsp. sesame oil
2 Tbs. dry roasted peanuts, chopped.
Mix the sauce ingredients together in a small bowl
Heat the vegetable oil in a skillet over medium-high heat. Add the garlic and sauté for a minute. Add the green beans and shitakes, and saute, stirring frequently, for about 5 minutes. Add the bell peppers and cook for another 2 minutes. Check for doneness. Add the sauce, and cook stirring frequently, for about a minute. Check doneness and seasoning. Drizzle on the sesame oil and chopped peanuts and serve.
