I have liked barbeque pizza since the first time I had one with chicken at a California Pizza Kitchen restaurant. My son Benjamin likes to make it with leftover pulled pork. I had some leftover smoked ribs, and meat from them is what went into the pizza. In this case I made pizza for one.
Pizza dough (from Pizza for One or for Many )
1/4 cup barbeque sauce
A handful of chopped smoked rib meat
Shredded mozzarella
Two slices of onion (I used red)
Sliced pickled jalapenos.
Prepare the dough. Preheat the oven to 475 degrees. When the dough is risen, form it into a circle about the size of a dinner plate. Put it on a piece of baking parchment. Spread on the barbeque sauce, then the meat, and then the mozzarella. Sprinkle the top with the sliced onions and pickled jalapenos. Bake for 14-15 minutes until the crust is done and the cheese is browned. Cut and serve immediately.
Note: The same basic idea can be done with various meats. California Pizza Kitchen uses chicken. Ben uses pulled pork. I have used ham and smoked sausage. The cheese can also be varied. Ben likes cheddar with this. Since this is not an Italian pizza, I don’t think anyone should feel limited to what cheese Italians would use.
