Blue Cheese, Pistachio, and Onion Pizza

I recently saw a post on how delicious gorgonzola, walnuts, and red onions are as a topping for pizza. I liked the idea, and made the same sort of thing with what I had on hand, which was blue cheese, pistachios, and yellow onions. It was delicious. I think the only thing I really lost from my substitutions is the bit of color which would have been provided by the red onion. Quantity comments below are loose, but are for a one person pizza. To welcome my daughter Amanda back from a year in Italy, I made four different one person pizzas and we shared them, so there were a variety of flavors. This was the best.

Top the pizza dough with little clumps of blue cheese. They do not need to be spread around, since they will spread as they melt. Thinly slice part of an onion and sprinkle it over the pizza. Coarsely chop a couple of tablespoons of pistachios and sprinkle them over the pizza. Bake for about 15 minutes on a pizza stone or pizza steel in an oven preheated to 475 degrees.
