Some time ago, we bought some high-end (Nuri bran)d canned sardines from Portugal. Carol wanted to use one of the cans with pasta, and this is what I made. Essentially, this was a pantry dish for 2 people, using what I had, and everything can be substituted for what you have on hand. This is a quick meal taking 30 minutes or less.
4 oz. pipe rigate pasta
4.4 oz. (one can) Nuri sardines in spicy tomato sauce
2 oz. (one can) flat anchovy fillets
3 Tbs. olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1/3 cup pitted Kalamata olives, chopped
½ cup pizza or spaghetti sauce
14 cup white wine
Chopped green onions for garnish
Parmesan cheese
Heat the olive oil in a large skillet and saute the onions until translucent. Add the garlic and cook for another minute, until fragrant. Add the sardines and anchovies, breaking them up. Add the kalamatas, pizza or spaghetti sauce, and wine, and cook into a sauce.
Cook the pasta according to the package instructions. Drain well and stir into the sauce.
Serve on plates with green onions and parmesan.
