Roasted garlic is easy to make and is useful in many recipes. This batch was made for the Roasted Garlic Focaccia , which includes a whole head of roasted garlic pressed into the puffed dough before baking. (It is really good.)
Preheat the oven to 350 degrees
Tear off a piece of aluminum foil about a foot long. Take a whole head of garlic and with a sharp knife cut off the end to expose the cloves of garlic. Drizzle about a tablespoon of olive oil over the cut cloves. Gather the edges of the aluminum foil and pull them together so that the aluminum foil is now a sealed pouch with a handle. Put the package in the oven and roast for an hour. Remove from the oven and allow to cool before handling. Here is what the roasted head looks like before peeling.
